Hot creamy mouthwatering..Sure to impress!

Ingredients
- 2 tablespoons coconut oil or water (for pan)
- 1 pack mushrooms (8 oz)
- 1 large onion
- 2 small tomatoes, or 1 big one!
- 3 large garlic cloves
- 2 cups noodles (cook them according to their package instructions)
- 2 cups chopped broccoli (if using fresh, steam them to soften up. Frozen tends to be softer already)
- 1/4 cup water
- 2-3 cups vegan cheese depending how much sauce you prefer. Be sure to see the link below for the ingredients you'll need for the sauce :)

Directions
In a skillet on medium/low heat add 1 tbs of coconut oil (or water). Chop & add your onions. Let cook 6-8 min stirring in between, until more translucent, & edges are browning. Peel & mince garlic, add to the skillet. Stirring a few times for 5 min, until garlic is toasted. Stand back & add 1/4 cup water. This will steam! Be careful! Then add your chopped mushrooms, stir, & cover on medium heat. Let this cook about 10 min, stirring in between, until mushrooms are tender. Meanwhile be sure to have your pasta cooking, based upon the package instructions. Once pasta is done, drain & rinse noodles. Add 2 tsp each of salt, pepper, & garlic powder. Taste! Add more seasoning according to your liking. Put 1 tbs of oil in the empty pan (optional) & put the noodles back in the pan. Add your mushroom mixture, chopped broccoli, and cheese sauce (recipe link above). Mix and cover for about 5 min, just to get everything nice & hot together. 4 minutes in add chopped tomatoes, stir and cover 1 more min. Taste! Add seasoning if needed. Once everything is hot, grab bowl, smile, & enjoy the nutrients you're giving your body!
* Green chile is great to add for spice & flavor. Garlic bread is great on the side!
