what I eat in a day: a vegan thanksgiving
happy soul sunday! remember to do something amazing for yourself!
this is what I ate today on thanksgiving as a vegan! (I'm Canadian so thanksgiving is in October). I thought it'd be fun to break some of the stigmas about "vegan thanksgiving" and show that you can still have a delicious holiday meal even if you're choosing to eat a plant-based diet. And remember that this is just what I ate on this specific day, I don't eat the same everyday and our bodies all require different things so listen to your own body!
"carrot cake" oats:
- 1/2 cup rolled oats w/1 cup of water or plant milk
- 1 grated carrot
- 1/2 mashed banana
- 1 tbsp flaxseeds
- 1-2 tsp cia seeds
- spices (cinnamon, nutmeg, ginger, clove,
little bit of black pepper) about 1/4 tsp - 1/2 tsp of each.
cook everything together until the oats have softened and the ingredients are well combined. then top with more banana, walnuts, almond butter, and maple syrup.
