In this episode of Abbey’s Kitchen, Abbey is in the great outdoors and excited to get grilling in celebration of father’s day! Abbey knows you might be confused because the title of this video says vegan burger and father’s day… but Abbey assures you that these vegan burgers are so delicious that they will even impress the biggest carnivores in your dad. Abbey’s dad is a fan of vegetarian food, so even though he isn’t a vegan or vegetarian, she knows that he is going to adore these burgers.

Let’s get grilling!

To a bowl, mix together cooked quinoa, sweet onion, pureed black beans, crushed walnuts, gluten free breadcrumbs, garlic, parsley, tamari, cumin, chili powder, black pepper and salt. Put everything into the food processed and give it a good mix until everything comes together. Transfer back to a bowl and pack into some nice sized patties. Place onto a parchment lined baking sheet and then transfer them to a fridge for at least an hour to set.

Meanwhile preheat grill to medium high heat and toast the buns.

Once burgers have set in fridge, pop on the grill and grill for about 5-7 minutes per side. Close the lid and let them cook all the way through.

Now it’s time to assemble.

To the bun, add a layer of mustard, pickles, vegan burger, tomato slices, avocado, microgreens, ketchup and put it all together. Enjoy!

Abbey hopes you enjoyed these vegan burgers for father’s day and leave a comment below with some great vegan recipes your dad is actually going to eat!
