Rawspirations Raw Vegan Chocolate Almond Energy Health Bars

Hi Guys!

As promised via my Instagram account @Rawspirations , here is the recipe to these healthy Raw Vegan Chocolate Energy Bars and a simple tutorial to demonstrate a few techniques. I'll eventually get a proper set up so I can talk to you and give step by step guides!

These bars are my fav, and husbands too. I love them because of their nutritional value! They are packed with healthy fats, proteins, nutrients, vitamins and minerals such as vitamin E, Iron, magnesium, zinc, selenium, folate, just to name a few of the health benefits! I consider these babies to be a great little treat to keep stored in the freezer for when your having mid day cravings or need a boost in energy! Kids love them too!

🍫First layer ingredients:
• 1 cup raw almonds
• 1 cup unsweetened coconut shreds
• 2 heaped Tbs cacao powder
• 10 pitted medjool dates
• 1/2 cup pepitas (pumpkin seeds)
• 1/2 cup sunflower seeds
• 1/3 cup pure maple syrup
• Tsp vanilla bean paste

☄️Method:
1- Place all ingredients in food processor and pulse until ingredients are fine and stick together. If they don't stick together, add in a tbs more of maple syrup and pulse a little longer.

☄️2- press evenly into a square or rectangular flan tin that has a push out base.

🍫Second layer ingredients:
• 1 cup pure almond butter, (I make my own but you can purchase from supermarkets in health section or health food stores). Raw or roasted is fine.
• Tsp pure maple syrup
• Tsp vanilla bean paste

☄️Method:
Combine all ingredients together and spread evenly over base. Place in freezer till hardened. (Takes a couple of hours).

🍫Chocolate layer Ingredients
* (if you prefer not to make this step the alternative substitute would be to buy 2 blocks of raw vegan chocolate from your local health store (approx 200g) and melt down.

• 1/2 cup cacao butter buttons
• 1/2 cup coconut butter paste
• 1 tbs coconut oil
• 1/3 cup pure maple syrup or coconut nectar, (add more if you prefer sweeter)
• Tsp vanilla bean paste
• 2 tbs cacao powder

☄️Method: Melt all ingredients over double boiler and ensure mixture is mixed well and uniform. Remove slice from freezer, cut into bars and coat each one as shown in video!

Freeze for a further hour. Only remove from freezer when ready to consume.
